Easy and healthy way to get your greens in startin

Easy and healthy way to get your greens in starting with breakfast! I love spicy Mexican style bowls and this morning I created this breakfast bowl with a over-medium egg, here are the deets —⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
What you need:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 or 2 eggs - totally up to you⠀⠀⠀⠀⠀⠀⠀⠀⠀
Some greens - today I did a spinach greens mix and added some pea shoots⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cilantro⠀⠀⠀⠀⠀⠀⠀⠀⠀
Green onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 a Roma tomato⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 an avocado⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Cook your egg in a little coconut oil (or whatever you have on hand) I seasoned mine with salt, pepper, and chipotle chili (obvi 🤤)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a bowl lay your greens base down⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Add your cilantro, green onion and tomato on top⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Add your cooked egg and your sliced avocado⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Top with a sauce! I used @acidleague Mango Jalapeño Vinaigrette because I love the fresh acidity flavor it adds to the savory bowl + it has a kick

Sunday’s are for not making the bed because I’m just going to crawl back in during golden hour to take a nap and enjoy that beautiful light ✨ I hope you are all having an amazing Sunday & a great start to your last week of February #piscesseason is upon us and as a Pisces gal I can not wait to see what the new month has in store for me 💫

Amazing farmers market find this week with these Oyster Mushrooms from @fatmoonmushrooms 🤤 Did you know that oyster mushrooms can help support cardiovascular function by relaxing tense muscles, stimulating blood flow, and supporting health blood vessels + cholesterol levels? This week I used mine in a gyro style sandwich by stir frying them up with a little sesame oil, garlic and fresh ginger — delicious 😋

Thought I would start out the week with a little introduction for those of you who are new! Hi there, my name is Cortney! I am the person behind the blog www.cortneytayla.com - your source for all things health, wellness, fitness fashion and skincare. Along with blogging I am also a mama and wife & I am love every second of it 🤍 Along with loving to be a mom and wife I love farmers markets on Sunday’s, buying too much workout clothes, strong organic coffee and the ocean 🌊. I am happiest in the late summer and fall when the air is a little crisp but warm during the afternoon. I love to make fresh healthy juice and cooking is my passion. I am always trying new recipes and I love sharing them with all of you! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I am currently studying to be a health coach at @nutritionschool & I couldn’t be more happy with the path that I am on with it! I have always loved health and wellness and I can’t wait to be able to help others on their journey! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
