Honestly even as an Integrative Nutrition Health Coach who understands the importance of a balance diet I still struggle to make dinner every night. I love to cook but having an easy meal that I can create that gives me my night back to spend more time with my family is a huge win for me. One easy meal I consistently have in my rotation is my Mediterranean inspired Couscous Bowl.

- Here is what you’ll need
- 1/2 cup of tomatoes
- 1/2 a red onion
- 2 summer squash
- 1 can of chickpeas
- 1 cucumber
- 1/2 cup of feta cheese
- 2 cups of pearl couscous
- freshly chopped parsley
- 2 tablespoons of olive oil
- 1/2 TEASPOON OF PAPRIKA
- salt and pepper to taste
- How to put it together
- In a sautee pan add your olive oil, tomatoes
- cook your tomatoes down under they are tender and almost bursting
- while your tomatoes are cooking down start cooking your pearl couscous to the DIRECTIONS on the packaging. i love this brand because it has turmeric for some extra anti INFLAMMATORY poweR
- add your two summer squash into your pan and cook down. during this time chop the rest of your veggies up and crumble your feta
- yoU SHOULD BE SEEING THE TOMATOES COOKING DOWN AND MAKING A NICE SAUCE NOW. ADD YOUR SALT AND PEPPER TO TASTE.
- aDD YOUR CHICKPEAS TO YOUR PAN AND ALLOW TO COOK FOR ABOUT 3-5 MIN. CANNED CHICKPEAS ARE ALREADY COOKED SO YOU ARE REALLY JUST WARMING THEM AND BLENDING THE FLAVORS TOGETHER.
- FINISH UP WITH YOUR PAPRIKA AND ADD YOUR COOKED COUSCOUS INTO PAN WITH TOMATOES, SUMMER SQUASH, AND CHICKPEAS. ALLOW FLAVORS TO BLEND FOR 3 MIN
- YOU ARE READY TO PLATE! TOP WITH YOUR CHOPPED VEGGIES AND ENJOY!
